This wonderful programme on the bbc iplayer (it has been broadcast recently) has several pieces on bicycle design and history and is essentially on new materials and their consequence on design of objects around us. I thoroughly recommend it. The first section on bikes at the beginning is followed later by a bit on carbon fibre frames!
